I would like to thank everyone at game village for the lovely thanks received on my win today. I was fortunate enough to win the progressive jackpot in cherries today of over £1,000. I would just like to say a great big THANK YOU! for my top of the month win, I still can't believe I won it. Someone in chat asked me did I scream! The answer was no, I was to stunned to scream, I just sat there frozen to the spot waiting for it to sink in. Then when it did sink in, I was so exited it took me forever to get to sleep that night. Many people have asked me what I will spend it on. Most likely be a holiday, I have two children aged 8 and 5, and they have a week off school soon which will give me plenty of time to get something booked. I will also give some to my niece, she has two jobs and her husband works very hard too, but all their wages go on bills, so I will make sure they have a really good night out on me. I had a few pounds left on Tuesday afternoon and was going out so popped into the Inn and prebought some tickets for the 1p bingo.  I decided to buy 16 tickets for ten games to save a little money for later on. The first game started and I thought I would watch that before going.  Imagine my surprise when the numbers started disappearing very quickly on one ticket. The twenty second number came out of the pot and my name came up.  At first I was delighted that I had won the £20 pot but then realised it was saying progressive jackpot and everyone was congratulating me.  I couldn’t believe my eyes.  I would like to say thank you to everyone at Game Village. You can not beat a recipe that contains chocolate!

Ingredients

For the chocolate and tropical fruit ice cream bombe
300g/10½oz ready-made chocolate cake, sliced
150ml/¼ pint ready-made ice cream
4 tbsp frozen tropical fruit, defrosted
icing sugar, to dust
For the almond brittle
4 tbsp caster sugar
2 tbsp flaked almonds
For the chocolate sauce
2 tbsp golden syrup
3 tbsp cocoa powder
100ml/3½fl oz double cream
splash water
30ml/1fl oz orange liqueur

Method

1. For the chocolate and tropical fruit ice cream bombe, lightly oil a small glass bowl and line with cling film. Line the bowl with the slices of chocolate cake.
2. Half-fill the bowl with ice cream, then top with the fruit. Cover with the rest of the chocolate cake to seal in the fruit and ice cream. Push firmly or weigh down to set the shape of the bombe. Refreeze for five minutes to prevent the ice cream from melting while you prepare the almond brittle and chocolate sauce.
3. For the almond brittle, place a frying pan on a medium heat, add the sugar and cook until it melts and turns a pale caramel colour. Stir in the flaked almonds and then pour onto a non-stick mat or lightly greased baking tray and leave to cool. When cooled and solidified, break into pieces.
4. For the chocolate sauce, put the syrup, cocoa powder, cream, water and orange liqueur into a small saucepan and warm gently on a low heat.
5. Remove the ice cream bombe from the freezer, turn out and remove the cling film. Pour the chocolate sauce over the top.
6. To serve, decorate the ice cream bombe with shards of the almond brittle.
